
Carefully pour the orange juice into the pan and bring to the boil. Add the honey, loosely cover the pan with foil, then transfer to the hot oven. Cook until potatoes are tender when pierced with a knife, 20 to 25 minutes. If the liquid reduces too quickly, add a splash of water to the pan. (This dish can be made ahead: To store, separate the potatoes and drippings into two different containers. To reheat, add the sticky drippings to a pan along with the potatoes and a splash of water or orange juice and simmer until hot.)
