Pizza is a constant source of inspiration. If I love the classic Neapolitan or Roman version, I never say no to a small original part! The pear – gorgonzola combination is one of my favorites so I didn’t hesitate to prepare this recipe. The caramelized pear, the bubbly cheese, the chopped hazelnuts: a perfect little bouquet of flavors that I highly recommend! I hope you will try and enjoy this pizza!

Pizza Caramelized Pears and Blue Cheese

A dreamy sparkling pizza, sweet and savory!

Preparation time 20 minutes
Cooking time 10-12 minutes


Instructions

  1. Cut the pears in half, remove the seeds and thinly slice them, do not peel them, it is not necessary,

  2. Finely chop the red onion,

  3. Heat the pan with a spoonful of olive oil,

  4. Add the pears and let them caramelize for 2 to 5 minutes, until they become tender. Don’t overcook them so they stay together.

  5. Remove them from the pan and set them aside,

  6. In the same pan, add the remaining tablespoon of oil and add the onion over medium-low heat,

  7. Season with salt, pepper, thyme and cook for 10 minutes until the onion is caramelised,

  8. Pour in the honey and cider vinegar, salt and pepper to taste, cook for 2 minutes and then set aside,

  9. Preheat the oven to 220°C,

  10. Spread the crème fraîche on the pizza,

  11. Spread the red onion mixture on top,

  12. Add the caramelized pear slices and sprinkle with the grated cheese,

  13. Finish by sprinkling with chopped hazelnuts,

  14. Bake for 10-12 minutes, until the cheese has melted and bubbled and the sides are just golden.

Pizza with caramelized pears and blue cheese

Just the best slice of sweet blue cheese goodness!

Preparation time 20 minutes
Cooking time 10-12 minutes


Instructions

  1. Half a pear, core and slice: do not peel it, it is not necessary,

  2. Thinly slice the red onion,

  3. Heat a non-stick pan over medium heat with a spoonful of butter,

  4. Add the pears to the pan and caramelize for 2-5 minutes, until they soften a little, being careful not to mush them.

  5. Remove from the pan and set aside,

  6. Add the remaining tablespoon to the pan and add the sliced ​​onion,

  7. Season with a pinch of salt, fresh thyme and cook for 10 minutes until caramelised,

  8. Add the honey and apple cider vinegar, add more salt and pepper to your liking, cook for 2 minutes and set aside.

  9. Preheat the oven to 220°C (425°F),

  10. Spread sour cream on the pizza dough,

  11. Brush the onion mixture over the top, distribute it evenly,

  12. Sprinkle the chopped hazelnuts,

  13. Arrange the caramelized pear slices on top and crumble them over the blue cheese,

  14. Bake for 10-12 minutes, until the cheese is melted and the edges are golden.
