I don’t necessarily like rock milk chocolates and other commercially popular chocolates because I prefer dark chocolate, which is a bit strong. Since I was little, one of the Christmas musts has been truffles. There are 5 of us and each of us has our favorite recipe, dark with rum for my dad, with milk and passion fruit for my mum, with pistachio for my little brother and with praline for my little brother. My favorite is the dark chocolate one, covered in a thin layer of spiced or cinnamon chocolate powder. However, I propose a version that everyone will like: dark chocolate – citrus fruits.
For this pairing I chose Valrhona 66% Caribbean chocolate covered with a whipped ganache with Yuzu Inspiration chocolate, a Valrhona creation. You can easily play with this recipe by varying the chocolates – see the notes – so don’t wait any longer, dress up your chocolate truffles for New Year’s Eve, they want to party too!

Dress up your chocolate truffles for New Year’s Eve, they too want to party and what’s better than a Fruit Inspiration chocolate to make them incredible and surprising!

I don’t really like praline chocolate or any other sweet milk chocolate that you can easily find in stores, I definitely like chocolate that is a little stronger and we make truffles every year. There are 5 of us at home and each of us has our favorite truffle recipe, dad’s is dark chocolate with rum, mum’s is milk with passion fruit, little brother’s is pistachio and my little brother likes hazelnuts better. My favorite is with dark chocolate, covered in spicy chocolate or cinnamon sugar. Today’s version really pleased everyone: dark chocolate and citrus, or should I say Yuzu.
For this combination, I chose Caraïbean Valrhona 66% chocolate and garnished it with Yuzu-inspired chocolate, created by Valrhona. You can easily twist this recipe by varying the chocolates – see the notes then dress up and prepare the truffle to celebrate!!

Fantasy morsels with chocolate and Yuzu Inspiration
Take your classic truffle to the next level by twisting it with delicious, airy whipped cream flavored with Yuzu Inspiration!

Ingredients
Yuzu-inspired whipped ganache
Instructions
Chocolate truffle

Heat the cream, without bringing it to the boil,

Pour over the chocolate to melt it,

Add the butter and mix well,

Cover a rectangular baking tray with cling film,

Transfer the chocolate mixture onto the baking tray, leveling the surface as much as possible,

Cover and set aside in the refrigerator for at least 2 hours – ideally overnight,

Using a knife, cut off 1-in. cube,

Prepare a plate or bowl with cocoa powder and lightly toss each truffle cube into the cocoa powder,

Set aside in the refrigerator until ready for the next step.
Yuzu-inspired whipped ganache

In a saucepan, bring a third (50 g) of the cream to the boil,

Pour the boiling cream over the Yuzu Inspiration chocolate in several batches and mix well until you obtain a nice, silky consistency.

Add the honey and the remaining cream,

Set aside in the refrigerator to cool completely, preferably overnight,

Before serving, whip the ganache, gradually increasing the speed of the whisk,

Prepare a piping bag with a fluted tip: my favorite is Wilton’s M1,

Using a toothpick, draw a few lines of red food coloring into the piping bag,

Transfer the whipped ganache into the piping bag,
-
Set aside in the fridge until ready to serve.
Final touch

Once all the elements are ready, pour the whipped ganache onto each truffle,

Finish by garnishing the morsels with decorative sugar or sprinkles,

- If you’re a little worried about the Yuzu – Caribbean dark chocolate combo, try something softer like Jivara milk chocolate and passionfruit or Raspberry Inspiration.
