This cookie is one of my favorites because it’s so simple. It doesn’t require too much waiting/cooling time and everyone likes it: lovers of both sweet and strong chocolate, combining the strength of bitter cocoa powder with the sweetness of Dulcey chocolate.
I challenge you to eat just one: well, it’s impossible! They are great to offer, serve with coffee, in short they are perfect! Objective, me? In short: p

Sweet chocolate biscuits with fleur de sel
The chocolate biscuits that everyone wants!!

Instructions

Preheat the oven to 180°C,

In a bowl mix the soft butter with the brown sugar,

Add the egg and vanilla extract to obtain a smooth consistency,

Add the cocoa powder then the flour and salt,
-
Once the dough is smooth and malleable, roll it out very roughly and wrap it in cling film and leave to rest in the refrigerator for at least 15 minutes.

On a lightly floured work surface, roll out the dough with a rolling pin until it is about 0.5 cm thick.

Cut out circles using a glass or a special biscuit cutter,

Arrange the biscuits on a baking tray covered with baking paper,

Cook for 7-8 minutes. Test with the first baking, checking regularly because it is difficult to control the baking on already dark biscuits.

Remove from the oven, transfer to a wire rack to cool completely.

Once the cookies are cool, melt the Dulcey chocolate in the microwave in 30-second increments and then 10-second increments, stirring well in between. It’s best to melt the chocolate in a bowl over a pan of boiling water: let the water boil, then remove from the heat and place over the bowl of chocolate.

Using a fork dipped in melted chocolate, make an imprint on the biscuits, do not smooth the mark for a rustic effect,

Allow the chocolate to solidify and store it in an airtight container.

These biscuits are among my favourites, they can make everyone fall in love, whether you like bitter chocolate or sweeter chocolate! They pair with pretty much any drink and make a great gift. You don’t need a fancy cookie cutter or nozzle – just grab a glass and a fork! The taste will still make you look like a star!!

Instructions

Preheat the oven to 180°C (350°F),

In a bowl mix the softened butter with the brown sugar,

Combine with the egg and vanilla extract until you obtain a soft and smooth consistency,

Add the cocoa powder then the flour and salt,
-
Once the dough is well mixed, being careful not to overwork it, roll it out roughly, wrap it in cling film and place it to rest in the fridge for 15 minutes.

On a lightly floured surface, roll out the dough using a rolling pin, go no thinner than 1/4 inch,
-
Cut the dough into your favorite shapes,

Transfer them to a baking tray lined with baking paper. If you don’t cook them straight away, let them cool so they will keep their shape.

Cook for 7 or 8 minutes,

Transfer to a cooling rack,

Once completely cooled, melt the Dulcey chocolate over a pan of boiling water – or in the microwave, for 30 seconds and then 10 seconds, stirring all the while.

Use a fork and score each cookie, leaving it quite rough to get some textures,

Allow the chocolate to solidify before serving and/or store them in an airtight container.
